The USDA has specific rules and regulations on the design of the physical facility, operation methodology, and the selection/approval of the equipment
within the facility, including the layout and installation.
CEI has done several facilities in the past several years and are known very
well by USDA personnel (we are often referred to clients by the USDA).

Should a new facility be considered now or in the future for USDA operation,
it is important that it be considered in the original design. The initial additional cost for USDA compliance is not great (a few % over a standard FDA
plant); however, to refurbish an existing facility to USDA can be very costly.
CEI has worked on USDA facilities covering rabbit, chicken, tamales,
taquitos, meat stuffed pastry, chili, braised meat, soups and chowders, etc.
